Day After Thanksgiving Muffins
Every Thanksgiving my mom would make a pan of plain vanilla muffins. Then, the morning after Thanksgiving, she would slather the muffins with leftover cranberry-orange relish. As a kid, this did not appeal to me at all. Now, as an adult, I love these muffins and the tradition of putting left over cranberry-orange relish on them! I'll be honest, the muffins are good but rather plain. But that is the beauty of these muffins. They really let cranberry relish (or jam or butter) shine. Enjoy this recipe! . . . keep reading

REVIEW: Gillian's Pasta
Recently, while at my local health food store, I noticed new bags of gluten-free penne pasta. The bright bag was emblazoned with "Gillian's Foods" on the front. To be honest, I've heard of Gillian's but have never had the chance to try any of their products. I thought this was a good time to give them a whirl. . . . keep reading

Pumpkin Cookie Recipe
I love pumpkin and my goal this year was to make more than just traditional pumpkin treats, like pumpkin pie and pumpkin bread. These soft cookies were born from that desire. They are super easy to make and taste just like fall: warm, spicy and filled with pumpkin. Chocolate chips would be a fantastic addition to these cookies if you are so inclined. However, they taste great on their own. . . . keep reading

Sweet Corn-y Cornbread
I love that cornbread has countless variations. This version contains a little sugar for sweetness and whole-kernel corn. Don't worry if you can't get fresh corn (or don't want to deal with cutting fresh corn off the cob.) Frozen corn works just fine! . . . keep reading

Apple Cake Recipe
This apple cake is delightful. Oddly, it reminds me of an apple pie. I think it is because of the abundant amount of apples in the cake. Seriously this cake is loaded with apples! Beneath the cinnamon-y cake, you will find a delicious layer of soft apples. Yum! . . . keep reading
